Berbere-Spiced Red Lentils With Yogurt

1. In a medium saucepan, saute the shallot and ginger in the olive oil over medium heat until the shallot is soft. Add the garlic and the berbere spice, stir to combine. Add the lentil and cook for a couple of minutes. Add the tomatoes and broth, bring to a boil, lower the heat and simmer, covered, until the lentil are soft, about 25 minutes. Stir occasionally and if the lentils are drying out add more liquid. Salt and pepper to taste and serve with a dollop of yogurt and garnish with cilantro. 2. This would be super with some injera or naan bread, which I really shouldn’t think about, as today is another fast day … wish me luck.

Cardamom Rose Rice Pudding

1. In a medium saucepan, mix coconut milk with cardamom pods and vanilla bean. Make sure to open the vanilla bean and scrape all of the vanilla-y goodness into the milk mixture. Heat this mixture on high/medium heat until almost boiling. Remove from heat and allow to cool to room temperature. Cover and place in refrigerator overnight to allow the spices to infuse. 2. Preheat oven to 350 degrees Fahrenheit. 3. In a baking dish, mix rice with the spicy milk mixture. Add a pinch of salt and stir. Place in oven and cook for 30 minutes. Stir and cook for 30 more minutes. 4. Remove from heat and allow to cool. 5. Make a quick syrup by mixing agave nectar with rosewater and regular water. 6. You can serve the pudding warm or chilled, depending on what you fancy. Before you dig in, top with the rosewater syrup and pistachios.

1. Layer veggies and peanuts in any order on cooked rice wrappers. Carefully roll veggies up and secure using a toothpick. 2. In a small bowl, combine coconut milk, sea salt and soy sauce. 3. Hickory Smoked Potato Salad

1. Wash and scrub the potatoes and cut them into halves or quarters. 2. Bring a pot of water to boil, add the potatoes and cook them until fork-tender, about 20-30 minutes. Drain the water and let the potatoes cool. 3. Once they are cool, cut them into bite-sized cubes and place them in a large bowl. 4. Stir in the sliced green onions. Taste and add more vinegar, salt, pepper, or smoked salt if needed. Serve warm or at room temperature and enjoy!

Kansas City Style Pork Ribs

1. Combine brown sugar, salt and RawSpiceBar’s Kansas BBQ Rub. 2. Massage spice rub and sugar mixture into ribs and let them sit in the fridge for at least 1 hour or preferably overnight. 3. To cook them on the grill, turn grill to 225F and place ribs meat-side down on indirect heat. Turn the ribs every half hour, basting with BBQ sauce every 20 minutes. Cook until the ribs are tender, about 3 to 4 hours. 4. If cooking them indoors, turn the oven to 350F. Place the ribs in a roasting pan with a rack. Slather the ribs with BBQ sauce and tent a piece of aluminum foil over them. Place ribs in the preheated oven, basting them with sauce every 30 minutes. Remove the foil for the last 30 minutes. It will take 2.5 to 3 hours for them to become fully cooked and tender.
