Aamras Recipe

The North Western and Western chunk of India has a special corner for sweet foods in their heart. And although, the entire country loves their mithai and various other desserts, Gujarat, Maharashtra, and Rajasthan have a special place for saccharine in their main course as well. The three states commonly consume a mix of sweet dishes and salted dishes like puran poli, shrikhan, meethi kadhi, and so on. One such popular sweet main dish is aamras. As the name suggests, aamras is made using aam (which means mangoes), and mostly just aam. The dish is essentially just pureed mango pulp occasionally mixed with milk or water and flavouring agents like cardamom, saffron, or dry ginger powder. Follow the quick and easy recipe below to whip up a delicious aamras to be savoured with piping hot puris.

Elaneer Payasam Recipe

Payasam is a popular South Indian dessert – much like the North Indian counterpart, kheer – made with sweetened milk, which is thickened by boiling and flavoured by adding various additives like kesar, cardamom, coconut, etc. Elaneer translates to ‘tender coconut’. So the elaneer payasama is a sweet milk dish with delicious coconut hints. Making payasam is supremely easy. All you require is milk, condensed milk, some dry fruits if you like, ghee for roasting the dry fruits, and the flavouring ingredient, which in this case is a tender coconut pulp and tender coconut water (used for grinding the pulp into a homogenous consistency). Follow the instructions below to whip up a traditional elaneer payasam in minutes!
